Sour Cream Banana Cake...


Now,the best recipes are the ones passed down and you can always tell the best ones used over and over when the page is spotted with stains of ingredients.This recipe page was one that my mother in law used from a book she had for a long time.You can start your own traditions even in a new book,anything your kids remember you making as a special food and years later,they'll look at that recipe and it goes on and on.I as I usually do have altered a couple of things,so I'll add the alterations under the original cake recipe.

Sour Cream Banana Cake

1/4 cup shortening
1 1/3 cups sugar
2 eggs
1 tsp vanilla extract
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt(I never use full amt.)
1 cup sour cream
1 cup mashed bananas(I use 3 really ripe ones)
1/2 cup chopped pecans(optional)
Cream Cheese Frosting

Cream shortening and sugar until light and fluffy.Add eggs and vanilla,blend thoroughly.Combine flour,baking powder,soda and salt.Add to creamed mixture alternately with sour cream,beginning and ending with dry ingredients.Add bananas and pecans,mixing until just blended.

Spoon batter into a greased and floured 13x9x2 inch pan.Bake at 350 degrees for 40 to 45 minutes.Mine gets done around 35.Cool and frost with Cream Cheese Frosting.

Alterations of my recipe...
I use 1 cup of white sugar and 1/3 cup of brown sugar,instead of 1 1/3 cup of white sugar and I add 1 tsp cinnamon

Cream Cheese Frosting

1 (8 oz) box of powdered sugar
1 (4 oz) cream cheese (recipe calls for the whole 8 oz)
1 stick of softened butter
1 tsp vanilla
2 -3 tablespoons milk

You can use half a stick of butter,but I add the whole thing and after it's mixed up I add a little powdered sugar to thicken it up.Just a little bit at a time,though.




The photo above is telling you why I got inspired to cook an old recipe today,just seeing the ginger,cocoa,sugars,cloves,molasses and corn syrup.I had to do it,I had to pull out an old recipe for the day.I am going to make some gingerbread this week,the banana bread aroma filled the house,but that gingerbread is so so so my favorite smell.
