Some days you just have to go Tasha...
There's days you just need to get back to your balance, kick back and go Tasha. I miss her, and not having another post showing us a simpler time. However, she gave us so much, and I think of her often, as I know so many do.I made some jasmine green tea, and wanted to put up some apple recipes since it's almost orchard time. I can't wait, so excited...

Lemons and Lemonade
Homemade Lemonade
I just washed the lemons, rolled them to soften, cut them in big chucks, squeezed them into the pitcher, added water and sugar to taste. I keep the lemons in the water overnight, refrigerate overnight, the next day it's way more lemony. Then I take the lemons out, see if it needs more water, or sugar, put in glasses, or you can leave in pitcher. I used 7 lemons, added over 1 cup of sugar, and always add more sugar. ;)

HAPPY 4TH!!!
I hope everyone is having a wonderful weekend, ours started today. These are my daughter's cupcakes, she has her own vegan business. We just watched the Patriot, and getting ready to watch Independence Day. Tomorrow night we'll watch the baseball game fireworks from our deck. I've been craving a good July 4th meal, so Sunday we'll grill some hamburgers, have potato salad, chips, and homemade lemonade. So there you go, don't have to deal with the traffic, we're having fun at home. BTW, How did it get July already?
I'm halfway done with my red and white ripple, and while watching the Patriot I thought how pretty a red, white and blue one would be. Maybe that'll be a project for next month, after I finish my red and white checkered afghan, which I started already. Yes, I'm one of those crafters, sometimes working multiple projects at one time.
For anyone wanting to make a good coconut cake that's fast, here's a recipe I've given before...
Coconut Cake:
Betty Crocker Yellow Cake with pudding
1 small box of instant vanilla pudding
1 (8 oz) container of sour cream
Mix the cake according to package, but mix the box of dry vanilla pudding with the cake mix. Put the sour cream,(you can use less if you want), in with the eggs and water told to be used on the box. Mix it all together. I baked mine at 350 in a bundt pan, because they make such moist cakes. Bundt pans take 40 to 45 minutes,( depending on your oven), to bake a cake and I oil it thinly before putting in the mix.
Cool cake completely
Icing:
1 box of powdered sugar mixed with one and a half tsps of vanilla, one stick of softened,not melted, butter and add enough milk, (little bit at a time) to make it the consistency you want. I think 3 Tbsps of milk to start will be good, depending on how thin or thick you want it.
Then as soon as I have the icing on cake, I sprinkle coconut all over.
